Funny thing - I don't eat a ton of beets when I'm cooking but I absolutely love them in a smoothie. There is is something about the natural sweetness of a beet tastes great cold blended into adrink. LIke their purple counterparts, golden beets are high in antioxidants and the colour is a treat for the eyes on a cold morning.
To make my mornings easier, I picked up some precooked steam packed (not canned!) beets from the grocery store. I mixed half a beet with half a cup of mango, tossed in two tablespoons of plain greek yogurt and some ice into my Nutribullet and got this yummy golden smoothie.
